Who could deny the muffin draw? Such a wonderful grab n’ go staple, no matter what time of day. A muffin always welcomes you: breakfast, lunch, dinner, or snack. The indiscriminate champion of comfort food!
Well this take on the classic muffin wholeheartedly accepts the nominee for best in class, best in show, best in uniquely divine flavor! There are so many food seasons to look forward to! It’s time to add pear season to your list, baby!
Muffins
1 CorEats Pumpkin or Banana Mix
2 cups peeled and diced, ripe pear
2 large eggs
¼ cup *milk, almond or coconut
¼ cup melted *butter or oil
1 Tbsp lemon or orange zest
1 tsp. Vanilla
Optional Toppings
Chopped pecans to taste
Cinnamon for sprinkling

Directions
1. Preheat oven to 350°
2. Process pears in a food processor until the texture resembles applesauce. Set aside.
3. In a large bowl, combine your CorEats baking mix with wet ingredients, mixing until smooth. Fold in the processed pears and pecans, if using.
4. Fill paper-lined muffin cups two-thirds full. Optional: Sprinkle granulated sweetener of choice, pecans and/or cinnamon.
5. Bake for 25 minutes, or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
*Substitutions
Substitute apple for pear!
We use dairy free options Earth Balance butter & almond milk but regular dairy will work as well!
