Lucy's Chocolate Chip Twist

Using Blueberry Muffin mix

I’m truly honored by the creative process that CorEats facilitates: adding a twist to a mix that enables not only a recreation of that fondly remembered treat, but one that lies within the parameters of our unique dietary needs.

 

 

This confectionary collaboration, thanks to our Blueberry Muffin Mix, couldn’t be more perfectly illustrated than when a dear friend of mine was craving her momma Lucy’s home-made baking. She was particularly inspired by the memory of a sweet cinnamon bread. Now what made this slightly sweet cinnamon bread special, was the handful of chocolate chips that Momma Lucy would lovingly fold in. This fond childhood memory birthed, “Lucy’s Chocolate Chip Twist!”

 

 


Since Our Blueberry Muffin Mix is free of grains, gluten, refined sugar (sweetened with 0-glycemic Monk Fruit), dairy, and preservatives …Nothing is holding you back! Just by skipping the blueberries, adding a dash of cinnamon and a handful of chocolate chips, you can enjoy the creative brilliance of Momma Lucy’s baking, too!  We take the fuss and muss out of baking. So go ahead. Create your own timeless memories with YOUR loved ones, and get baking!

 

Here is what you need:

 

 

Ingredients:

1 Blueberry Muffin Mix

½ cup milk

2 eggs

1 Tbsp oil

1 tsp vanilla

1/3 cup chocolate chips

½ tsp cinnamon

 

 

Instructions:

1. Preheat oven to 350°

2. Grease and line a muffin pan. Set aside. 

3. Whisk the milk, eggs, oil, vanilla, and cinnamon together in a medium bowl (if using butter or coconut oil, melt before adding). 

4. Add dry blueberry muffin mix. 

5. Mix until smooth and well blended.

6. Fold in the chocolate chips. 

 

 

For Muffins:

7. Pour your batter into the prepared muffin pan, roughly ¾ full (about ¼ cup of batter each)

8. Bake for 15 min, or until an inserted toothpick comes out completely clean. 

9. Cool completely to keep your cupcakes from sticking to the paper liners.

For a Loaf:

7. Pour your batter into a greased, parchment paper-lined, bread pan.

8. Bake for 35-40 min., or until a toothpick comes out clean.

9. Cool a min of 10-15 minutes (completely if you want it to slice nicely)
