Sun-Dried Tomato & Feta Bread

We’re at it again! And this time we’re transforming our beloved CorEats bread mix with sun-dried tomatoes, feta, and the perfect blend of spices. The layers of flavor within each slice will not only blow your mind, but they will serve as the perfect foundation for an explosion of culinary creations! You don’t need an excuse to enjoy everything you eat with CorEats!


Of course this bread is absolutely fantastic all on its own, but get down with your fancy self and try it with your favorite prepared eggs, top with pizza toppings, complement fresh soup and salad, or sandwich it up with whatever you crave! As I’m certain you’ve figured out- there’s no wrong way to CorEats!


This recipe is so fresh, so flavorful, SO easy to whip up, so delicious for ANY meal,  you FETA believe you’ll be in love!



What You’ll Need

1 CorEats Bread mix

2 eggs

¾ cup milk

1 Tbsp oil

1 Tbsp apple cider vinegar


Sun-dried Tomatoes and Feta Filling

1 cup Feta cheese *Dairy or Vegan

1/3 cup sun-dried tomatoes packed in oil, drained and roughly chopped

1 Tbsp fresh rosemary, minced  

2 tsp dried oregano

½ tsp garlic powder

 

 

Directions

1. Preheat your oven to 350°

2. Prepare your bread pan by greasing and laying parchment paper across 3 sides. 

3. Add all of the filling ingredients to a bowl and mix well. Set aside.

4. Prepare your CorEats Bread mix per package instructions.

5. Pour half the batter into the prepared pan.

6. Evenly distribute half of your feta filling over the bread batter, reserving the remaining half for the top.

7. Top the feta cheese layer with the remaining bread batter and smooth the top. 

8. Evenly sprinkle the remaining feta cheese filling over top of your bread batter. Using a butter knife, swirl and push the filling down into the batter, distributing evenly.

9. Bake for 50-55 minutes. To prevent over browning, lay parchment over the top part way through baking.

10. Cool for 10-15 minutes before slicing. Enjoy!
