Devastatingly Delicious & Easy Donuts

using CorEats Blueberry Muffin, Pumpkin Bread & Muffin, Banana Bread & Muffin, Chocolate Cupcake, and Pancake/Waffle mixes!

 

MMM, DONUTS! I mean, really, who doesn’t love donuts? I know you may say, “Well they don’t love me!” But what if I told you that the yummy feelings could be mutual? You love them, they love you, belly is happy, taste buds are in heaven, and ALL is right with the world while you enjoy that indulgent decadence? Oh I'm serious! There is no joking when it comes to these festive fall treats!

Maybe your next retort is, “Okay, let’s say I believe you... WHO has time to make wholesome donuts from scratch!?”

Oh, you silly thing… Don't worry your lovely head! You have time!  Haven’t you heard it said that everything is possible with CorEats? Here, let me show you! 

 

What will you need?
*3” Silicone donut pan, linked at bottom
*Oil spray
*Your favorite CorEats mix: Blueberry, Chocolate Cupcake, Pancake/Waffle, Banana, or Pumpkin mixes!

 

 

Methods and Directions:

 

Blueberry Muffin Mix

Simply follow package instructions omitting the blueberries. Try adding one of the following: 

*chocolate chips
*freeze dried berries
*1 tsp of cinnamon, or spice
*confetti sprinkles
...you name it!

 

This is how:

1. Preheat oven to 350 degrees.
2. Generously spray your silicone donut pan with oil.
3. Prepare your batter, using this mix.
4. From here you have 2 options:

- scoop dough into 3" silicone donut pan until each one is 1/2 full.
OR
- For our no mess tip, you can fill a baggie and “pipe” right into the donut pan. Twist the top of the baggie until the batter collects into a bottom corner. Cut a small opening out of the corner (¼ inch). Squeeze batter into pan. 

5. Bake at 350 degrees for 15 min, or until an inserted toothpick comes out clean!
6. Cool
7. Add favorite toppings and enjoy!

 

 

Chocolate Cupcake Mix

Prepare batter per package instructions.


This is how:
1. Preheat oven to 350 degrees
2. Generously spray your silicone donut pan with oil.
3. Prepare your batter according to package directions, using this mix.
4. From here you have 2 options:

- scoop dough into 3" silicone donut pan until each one is 1/2 full.
OR
- For our no mess tip, you can fill a baggie and “pipe” right into the donut pan. Twist the top of the baggie until the batter collects into a bottom corner. Cut a small opening out of the corner (¼ inch). Squeeze batter into pan.

5. Bake at 350 degrees for 15 min, or until an inserted toothpick comes out clean.
6. Cool
7. Add favorite toppings and enjoy!

 

 

Pumpkin or Banana Mix

Variations you'll want to bite into:

-Pumpkin or Banana (Follow package instructions for batter)
-Old Fashioned Cinnamon & Spice (replace pumpkin or banana called for with 1/3 cup applesauce)

 

This is how:
1. Preheat oven to 350 degrees.
2. Generously spray your silicone donut pan with oil. 
3. Prepare your batter using this mix.
4. From here you have 2 options:

- scoop dough into 3" silicone donut pan until each one is 1/2 full.
OR
- For our no mess tip, you can fill a baggie and “pipe” right into the donut pan. Twist the top of the baggie until the batter collects into a bottom corner. Cut a small opening out of the corner (¼ inch). Squeeze batter into pan.

5. Bake at 350 degrees for 20-25 min, or until an inserted toothpick comes out clean!
6. Cool
7. Add favorite toppings and enjoy!

Pssst. While warm, go ahead and throw some chocolate chips in, make a maple glaze (recipe below), or dust with cinnamon sugar!


 

 
Pancake & Waffle Mix

Check out Dr. Tara's spin on a classic donut using our Pancake & Waffle mix! These beyond delicious donuts whip up so easily. Trust me, you will want a DOUBLE batch! So grab your mixing bowls and alert your taste buds- these won't last long!

Here is what you will need:

1 CorEats Pancake & Waffle Mix
3 eggs
1/4 cup unsweetened oat or almond milk
1/4 cup avocado oil
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/4 cup collagen (vanilla collagen is even better)
1/4 cup Lakanto Golden monk fruit sweetener (linked below)

Cinnamon Sugar Dusting
1/2 tsp cinnamon mixed with 1 Tbsp Lakanto Classic or Swerve Granular sweetener. 

 

 

This is how:
1. Preheat oven to 350 degrees.
2. Generously spray your silicone donut pan with oil.  
3. Prepare your batter using this mix.
4. From here you have 2 options:

- scoop dough into 3" silicone donut pan until each one is 1/2 full.
OR
- For our no mess tip, you can fill a baggie and “pipe” right into the donut pan. Twist the top of the baggie until the batter collects into a bottom corner. Cut a small opening out of the corner (¼ inch). Squeeze batter into pan.

5. Bake at 350 degrees for 15-18 min, or until an inserted toothpick comes out clean!
6. Cool
7. Dip partially cooled donuts into cinnamon sugar and enjoy!

 

 

Toppings

Basic Glaze
2-4 tbsp butter melted (*can sub coconut oil)
1 1/2 cup powdered sugar (*check below)
1 tsp vanilla

 *For a 0-glycemic sweetener our favorite is Lakanto (linked at the bottom of this page).

For maximum seasonal flavor, you'll definitely want a maple sugar glaze and Nova's maple sugar is our favorite! This wholesome and flavor rich addition is wonderful when glazed over a pumpkin or old-fashioned donut!

To get a powdered sugar using ANY of your granular sugars just add to a high-speed blender until you have a powder and violà!

Mix powdered sugar with vanilla and melted oil/butter until smooth. Dip tops of  doughnuts and allow glaze to set.

 

 

Chocolate Glaze/Dip
1 cup of your favorite chocolate chips (*I like enjoy life, ;-). Check out @enjoylifefoods)
1/4 cup coconut oil

Place the chocolate chips and oil in a medium bowl. Melt over low heat, stirring continually until completely melted and smooth. Dip the tops of the donuts into the chocolate glaze or drizzle over the tops.

You’ll likely have leftover glaze... It’s great on ice cream!

 

 


Cinnamon Sugar Dusting
½ cup butter or coconut oil (Vegan butters like Earth Balance work great, too!)
½ cup sugar (Nova Maple, Lakanto Golden *linked below)
½ tsp cinnamon

For the topping, melt butter or oil. Set aside. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter/oil (or brush on) and then into the cinnamon sugar.

Coconut shreds, toasted
Bacon pieces
Chocolate chips
White chocolate
Butterscotch chips
Peanut Butter chips
Peanut butter icing
Candied fruit/cherries
Sprinkles
Dried fruit
Sprinkles
Chopped nuts* (pecan, macadamia, almond, peanut, walnut, peanut)

*You could get extra here and candy them by tossing into cinnamon sugar, spraying with oil, and roasting!
