Cream Cheese Frosting

Keto, Paleo, Heavenly

Enjoy this staple of all staples for your recipe arsenal!  The options are literally endless! This frosting pairs deliciously with ALL your favorite CorEats; think muffins, cupcakes, cinnamon rolls, and cakes, but better.  

I mean, I suppose you could just eat it right out of the bowl, too!


 

CorEats Cream Cheese Frosting

2/3 C Spectrum Organic Veg Oil (100% organic Palm Fruit Oil) 

4oz cream cheese, dairy or vegan* 

1/4 C butter, dairy or vegan** 

1 C Lakanto powdered monk fruit sweetener***

1 tsp vanilla

1/8 tsp salt

 

*I recommend Follow Your Heart Cream Cheese
**Earth Balance, soy free
***Tip: Powder your favorite granular sweetener by putting it in a high-speed blender for a few seconds!


 

Instructions

1. Cream butter, cream cheese & shortening. 

2. Add powdered sweetener 1/4 cup at a time and blend until smooth.  

3. Mix in vanilla and salt and TASTE!  

4. Spread or pipe onto cooled CorEats and chill until set. 

5. ENJOY!!! 


 

Toppings

For an added twist add ONE of the following: 

1/2 tsp pumpkin spice

1/4 tsp cinnamon

1 tsp lemon extract (this would be good on CorEats blueberry muffins)

1 tsp coconut extract (Ah-mazing on CorEats banana bread)

1 tsp almond extract ...or really ANY favorite extract!

2 tbsp cocoa
