using CorEats Bread mix


Sourdough bread is such a uniquely delicious- a classic with a distinctive, slightly sour while simultaneously sweet flavor profile. The beauty of this recipe is how easily we can transform CorEats Bread mix into this beloved favorite!


The simplicity of this recipe is quite astounding and found in souring yogurt with both lemon juice and apple cider vinegar. I find it best to sour the yogurt of your choice, either dairy or non-dairy, a bit prior to baking time to allow the natural yogurt cultures to mature.  


Enjoy this scrumptious variation as a lovely loaf, or easily use the batter in your silicone pans to make absolutely incredible rolls! 



Ingredients
1 CorEats Bread Mix
¾ cup plain yogurt *preferably Greek-style
2 eggs
2 Tbsp fresh lemon juice **
1 Tbsp apple cider vinegar
1 Tbsp oil
¼ tsp salt *optional

*Both dairy and non-dairy Greek yogurt will work! KitHill greek yogurt is my FAVORITE non-dairy, hands down. You can also try So Delicious yogurt.

**In a pinch? Try a “not from concentrate” bottled organic lemon juice.



Directions 
1. Preheat your oven to 350°

2. Prepare your bread pan by spraying or greasing it with oil. Lay a sheet of parchment paper across, from one side, across bottom, and up the other side. 

3. In a separate bowl, add the yogurt, lemon juice, and apple cider vinegar. Mix well and set aside. (*Souring the yogurt a bit prior to baking time will allow the natural yogurt cultures to mature, lending to a nice sour flavor).  

4. Empty the dry mix into a medium sized bowl. 

5. Add the eggs, oil, and salt to the soured yogurt. Mix well.

6. Combine the wet and dry ingredients, mixing until the batter is smooth.

7. Pour batter into your prepared baking dish.

8. Bake for 45-50 minutes, or until an inserted toothpick comes out clean and your bread is nicely browned. (*If your loaf is over browning before it’s ready, lightly cover with a sheet of foil or parchment paper).

9. Allow to cool completely for easier slicing.

10. Enjoy!
