Peanut Butter Muffins 

using CorEats Blueberry Muffin Mix

Move over Peanut butter cookies, there is a new favorite in town! And these babies will BLOW you AWAY!

These are so simple to throw together; using our Blueberry Muffin mix and your favorite nut butter (peanut butter, Almond, cashew, Sunflower butter… go wild and do you), stop everything and make these immediately!

It has always been a priority to feed my family and I wholesome foods that would sustain us throughout our day without sugar crashes or pointless, empty calories! Enter THIS recipe! Satisfy even your pickiest eater, especially the ones with that sweet tooth! Sweetened with  0-glycemic Monk Fruit, this recipe will delight & sustain morning, noon, or night. You can even fortify them even more by adding a scoop of your favorite protein or collagen powder!

Butter up your family with the BEST! A peanut butter cookie will never hold the same appeal from this day forth!



Here is what you will need

12 count muffin pan & liners
1 CorEats Blueberry Muffin Mix


Ingredients

1 Blueberry Muffin Mix
⅓ cup peanut butter
3 tbsp. butter, melted *we use vegan but you can use your go-to!
2 eggs
1/2 cup milk
1 tsp vanilla
1/2 cup chocolate chips *optional

 


Directions 

1. Preheat your oven to 350°.

2. Line a muffin pan with paper liners.

3. Empty the contents of your Blueberry Muffin Mix into a medium sized bowl.

4. Add all wet ingredients and whisk until smooth and creamy. 

5. Scoop your batter into muffin cups until ½ full.

6. Bake for roughly 18 minutes, or until an inserted toothpick comes out clean.

7. Enjoy!

 

 

Crumble Topping *optional
Looking to kick your muffins up a notch? Create a simple crumble using a nut of your choice (peanuts, almonds, cashews, or even sunflower seeds). 

½ cup almond flour *you may sub coconut flour 
¼-½ cup finely chopped nuts 
⅓ cup Golden Lakanto or coconut sugar*
Pinch of salt and cinnamon
½ cup chilled butter *vegan or dairy... even solid coconut oil works, but you will need to add a bit more salt

*to powder granular sweetener, simply add to a high speed blender until powdered

Add all ingredients to a medium-sized bowl. Work the butter into the dry ingredients using your fingers, a fork, or a cutting tool. Sprinkle over your batter prior to baking. Enjoy!


Peanut Butter Drizzle *optional
1/2 cup powdered sugar
1/4 cup creamy peanut butter 
1/4 cup unsweetened almond milk 

Add all ingredients to a small bowl and mix until smooth. To thin consistency, add milk, 1 tbsp at a time. Drizzle over cooled muffins. Alternatively, add to a small baggie and cut a small opening into the corner. Squeeze over muffins in a zig zag motion (this works better with a thicker consistency). Enjoy!
