I’m sure everyone has a happy memory of indulging in a delicious no-bake cookie. Mmm, gooey, chocolate, peanut butter, and coconut heaven? Yep, you read that right- coconut!
Fueling your body with wholesome joy does not mean that treats such as no-bake cookies have to remain locked away in the past. I often even find the wholesome tweaks result in something that far exceeds the original.
When you have a hankering for some good ol’ childhood delights, where there’s a will, there’s a way. And it just so happens that I love to find a way. Let’s get to those cookies!
Ingredients
2 cup oats
1 cup shredded unsweetened coconut
½ cup coconut oil
½ cup peanut butter*
½ cup coconut sugar
1/3 cup cocoa
1 tsp vanilla
Sea salt to taste
Notes
*Try substituting for your favorite nut or seed butter. I personally recommended cashew butter!
Instructions
1. Line a cookie sheet with waxed or parchment paper; set aside.
2. Combine coconut oil, peanut butter, coconut sugar, and salt in a saucepan and heat, stirring continuously until melted and well combined.
3. Stir in vanilla and cocoa powder. Combine until smooth.
4. Add oats and mix until well combined.
5. Add shredded coconut and stir until completely combined.
6. Drop 1 packed Tbsp. of the cookie mixture onto your prepared baking sheet. Continue until you’ve used all your cookie mixture.
7. Let cool in the refrigerator or freezer until hardened.
8. Serve cold or frozen. Enjoy!
Store in an airtight container in the refrigerator!
